The Great Gluten Free Flour Bake Off!

On Tuesday I did make it to the gym as I had hoped, taking it a bit easy since this is supposed to be a resting week, so I only burned 355 calories. All of which were offset by the sugar cookies I made in the evening. After all, I had to taste them to make sure they were OK! And what is it about cookie dough that is so irresistible? These sugar cookies get rolled out and cut into shapes, (I have Christmas trees, angels and stars) which can then be decorated with icing or tiny sugar baubles. But then you always end up with a bit of dough left over at the end, which isn’t enough to roll out and which is getting a bit tough anyways from too much flour. So there really isn’t any choice but to eat it!

I was doing some serious experimenting this year with different gluten free flours to see which made the best sugar cookies. They should be very pale, almost white, hold together well so they can be made into shapes, and taste sweet, without any other flavour tones so they can be a good base for the icing or other toppings. I found that the flours with bean or pea flours added were too sticky (they didn’t roll out well) and had a slight beany aftertaste. But then the rice and potato flours didn’t hold together nearly well enough, leading to very crumbly cookies. The flour which worked the best was the Doves Farm Plain White Gluten Free Flour, and while it worked well without, adding just a bit of Xanthum gum gave my cookies just the right consistency.

So after a day of experimenting I finally had the perfect sugar cookies – just like mom used to make, even if I wasn’t making them like mom!
